  •  1 kg beef or lamb (cut into large chunks)
  • 2 onions (finely chopped)
  • 3 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 150 g dried prunes
  • 1 tbsp honey
  • 1 tbsp sesame seeds (to garnish)
  • A handful of blanched almonds (optional)
  • Fresh coriander (for garnish)

  • Prepare the meat:
    First, heat olive oil in a large pot or traditional tagine. Add the chopped onions and sauté for 2–3 minutes until soft. Then, add the garlic and the meat pieces. Stir well.
  • Add the spices:
    Sprinkle in cinnamon, ginger, turmeric, salt, and pepper. Mix everything together so the meat is coated with the spices.
  • Simmer gently:
    Pour enough water to almost cover the meat. Cover the tagine and simmer on low heat for about 1 hour, or until the meat is tender.
  • Add the prunes:
    While the meat is cooking, soak the prunes in warm water for 10 minutes. After the meat is nearly cooked, add the drained prunes and honey to the pot. Cook for another 15–20 minutes until the sauce thickens slightly.
  • Garnish and serve:
    Finally, sprinkle sesame seeds and almonds on top before serving. Fresh coriander can also be added for extra flavor.
