Moroccan Pastilla – A Delicious Sweet and Savory Delight
Ingredients:
2 chicken breasts or pigeon (optional)
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cinnamon
1 teaspoon ginger
1/2 teaspoon saffron threads (optional)
1/2 cup chopped fresh parsley
1/2 cup chopped fresh cilantro
1/4 cup almonds, toasted and chopped
6-8 sheets of filo pastry
2 tablespoons butter
1/4 cup powdered sugar
1 teaspoon cinnamon for dusting
Salt and pepper to taste
Instructions:
1. Cook the chicken with onion, garlic, spices, and herbs in water until tender. Shred the chicken once cooked.
2. Saute the shredded chicken with butter, almonds, and a bit of cinnamon.
3. Layer filo pastry in a greased pan, adding layers of the chicken mixture between sheets.
4. Bake at 350°F (175°C) for 30 minutes or until golden brown.
5. Dust with powdered sugar and cinnamon before serving.
